Scrumptious Saturday


Today's meal can't really be considered "scratch-made", but it was made in the crock pot and it was especially delicious!!  Generally speaking, I'm not a huge pork lover - I think it's because I usually purchase pork chops, which end up overcooked and can be pretty tough to eat.  So about a month ago, I thought I would try something different and I purchased a 5 pound pork shoulder at Walmart for around $12.00.  As it turned out, the pork shoulder was already cut into two pieces so I didn't have to worry about cutting it into a smaller portion for just two people.  I had a package of Campbell's Apple Bourbon BBQ Slow Cooker Sauce, which called for a 2 to 3 pound pork shoulder (just perfect for one half of the pork shoulder) so all I had to do was put the pork in the crock pot and cover it in the sauce.  Hubby turned the crock pot on the next morning and the pork cooked all day on low.  The pork was so tender and the sauce was absolutely delicious!  I was pleasantly surprised and especially happy that hubby enjoyed it as well.  We had it with a side of home-made naan bread, but I think next time I'll cook up some rice pilaf to go with it as well.


I purchased the slow cooker sauce at Target a few weeks ago.  They had them on sale, 2 for $4.00, and I had a $1.00 off MQ on top of the sale price.  Since you could probably get 4 servings out of the 2 1/2 pound pork shoulder that I used, this recipe came to about $1.86 per serving.
