The recipe for this slow cooker dish is available over at onceamonthmeals. I'm not exactly sure that Lasagna Soup is the most accurate name for this dish, but it was definitely high on taste and flavor! Hubby enjoyed this dish as well, which always speaks volumes about a new recipe :) The only change I made was that I did not add the 1 cup of water when I added the pasta. I just added the pasta (I used small shell pasta) and let it cook till done. That's only personal preference because I prefer my "soups" to be a bit thicker, with less broth. If you'd prefer the soup to retain the "broth-y-ness", certainly add the water with the pasta. Top with Parmesan cheese and enjoy on a cold, winter night. This recipe is definitely going on repeat!
In an effort to use up some of the fresh veggies I've had sitting around, I threw together this "hash" for lunch one day. All I did was sautee sweet potatoes until they browned slightly and became tender, threw in some onions and brussells sprouts and cooked until the brussells sprouts began to caramelize. Top with some crispy bacon bits, a cooked egg, and some blue cheese for a little extra tangy-ness and enjoy!!
One of the other new crockpot recipes we tried this month was Brunswick Stew, from bakedinthesouth. This recipe was quite delicious, with a nice sweet, tangy taste from the barbecue sauce. The hardest part was shredding the chicken! As you can see in the photo, hubby and I made some naan bread to go with the soup, which is great to sop up the broth. I made this recipe exactly as written, although I used chicken breast, not tenders. It all comes out the same, though! Hubby liked this recipe as well, I think it might taste good with some rice added into it, so maybe we'll try that next time.
