Scrumptious Saturday: Blue Bacon Brussels Sprouts

Happy Fresh-Veggie February!   
I've been cooking with a lot of fresh vegetables lately and have found that I really like brussels sprouts.  Brussels sprouts are actually quite delicious if you season and cook them correctly.  There are some great recipes to be found on the Internet, but since today is Scrumptious Saturday, I'm sharing a recipe that I created myself (although I'm sure there are many similar recipes out there).  I hope you'll give it a whirl and please share your favorite ways to prepare brussels sprouts in the comments section, I'd love to hear them!


Blue Bacon Brussels Sprouts

1/2 pound of halved brussels sprouts, cleaned with stems cut off
Olive oil
2 strips of diced turkey bacon
3 - 4 Tablespoons of blue cheese

Heat up a skillet.  Add the bacon and cook until it begins to crisp up.  Add about 1 Tablespoon of olive oil and the halved brussel sprouts.  Let the brussels sprouts cook on medium heat so they begin forming a nice crust, stirring occasionally.  Cook the brussels sprouts for about 15 minutes or until they are nice and tender.  Remove from the heat and crumble two-thirds of the blue cheese over the top so it melts.  Top with remaining blue cheese crumbles and ENJOY!
