The first pre-made crockpot freezer meal that we made in January was Cowboy Crockpot Casserole from Crock-pot Ladies. You can find the recipe here. Hubby and I really enjoyed the meal, with a few tweaks to the seasoning. Also, you can note that we did not serve it with cheddar cheese on top. Only because hubby is not a fan of cheesy dinners, so sometimes I will make the sacrifice and not top certain meals with cheddar cheese :) When I had some for leftovers, I did put cheddar cheese on top prior to heating it up and it was SO good!
This was a very hearty meal, perfect for a cold winter night. All you need to do is make some cornbread and you have filling and delicious dinner that you didn't have to slave over for an hour! After cooking was completed, I ended up adding a little more salt than was originally called for, as well as a couple teaspoons of taco seasoning. Hubby & I thought the taco seasoning added a nice kick, although this meal isn't bland by any means. The only other "problem" I had was that the ground beef didn't break apart all the way as it cooked so there were some larger chunks of ground beef as opposed to it being evenly distributed throughout the dish.

In the comments on Crock-pot Ladies, someone mentioned serving the Cowboy Casserole over rice. Rice would definitely stretch this meal even further and would be a great way to remake the leftovers.
