Scrumptious Saturday: Crock Pot Hawaiian Luau Pork & The Leftover Remake!

I'm all about easy dinners.  The crock pot is pretty much my best friend when it comes to making good meals that are ready to eat when I get home from work.  I discovered Campbell's Slow Cooker Sauces a little while ago and they are actually really good.  The latest sauce we tried was  Hawaiian Luau, and it did not disappoint!  

I purchased a 5 lb pork shoulder a couple months ago for about $10, and since it's just me and the hubby, I was able to split it in half to get two meals out of it.  This slow cooker meal was so easy, all I had to do was thaw the pork shoulder and throw it in the crockpot with the sauce.  It cooked for about 8 hours on low before we were ready to eat it.  I served the pork with some leftover pasta (ok, don't freak out - normally I would have made rice, but since we already had leftover pasta I figured we might as well eat it up instead of making more food).  The mixture of the pork juices and slow cooker sauce turned out quite delicious and really keep the pork shoulder moist while it cooked.



When I was browsing the fridge for something to eat a few nights later (because I don't actually cook dinner every night!), I grabbed some leftover hamburger buns and a bottle of honey mustard dressing from the fridge.  I shredded the pork and then warmed it up in the microwave. I grilled a hamburger bun, put the pork on and topped it with some of the honey mustard dressing.  I couldn't believe how good this was!  I don't think the hubby would necessarily be crazy about the way I "remade" the pork, but it certainly was a great way to use up those leftovers hanging out in the fridge!!
