1 pineapple
3 pears
1lb strawberries
4 red peppers
2 bunches of scallions
3 cucumbers
1 dozen brown eggs
I always forget that the hubby does like certain fruit...I'm trying to get him to let me buy a basket of oranges, but he hasn't decided on that yet. So on Saturday, we purchased a pound of strawberries, a pineapple and 3 pears. I love fresh fruit!!
My purchases included a head of lettuce, 3 cucumbers, 2 bunches of scallions, and 4 red peppers. I also scored a dozen brown eggs, which are absolutely beautiful!!
I had a delicious salad with scallions and tomatoes for lunch today. I also added some salmon on top, just for an extra somethin' somethin'... Tomorrow, I will enjoy some of those red peppers with my lunch!!
Fresh veggies really help when you're trying to eat low carb/low calorie. I've been tweaking my diet a little, to keep my daily carb intake under or around 100 grams. This is in an effort to see if it might help my weight loss - I have a theory that people who are genetically predisposed to being diabetic may benefit from a lower carb diet. Don't take my word for that, it's just a theory, and I don't have proof...so this is purely an experiment. I found an interesting article here which I'm taking some tips and hints from it..I guess we'll see what happens!! At least going low carb allows me to indulge in cheese and eggs..the one downside is that I have to cut down on bread and pasta (frowny face).
Anyone have any opinions or advice on the low carb diet???
