So I finally made a hot version of flaxmeal cereal for breakfast - it's been a bit cooler here for the past few days, so I figured now is as good a time as any to try it out! I bought 16 oz of flaxseed meal at Wegmans for about $4.30. You use 1/4 cup for one serving of this cereal, so one package should last me awhile. In that 1/4 cup of flaxseed meal there are 8 grams of carbohydrates - significantly lower than regular cereal. I made my cereal with almond milk, as I think it really adds a nice flavor, however you can do it with water as well. I also added in some peanut butter, honey & craisins for extra flavor. This particular recipe is not a really low carb version, but you could definitely play around with different ingredients to make it low carb.
1/4 cup flaxseed meal
1/2 cup almond milk or water
Stir flaxseed meal into your liquid of choice, then microwave for about 1 minute. The cereal should be slightly thicker at this point.
Then, simply stir in whatever extra ingredients you like and enjoy your cereal! I love adding some creamy peanut butter and craisins. You could also add a sugar substitute (which should be low in carbs) to help sweeten the otherwise pretty bland flavor. I find that I stay pretty full and satisfied for several hours after I eat my cereal - which is a definite plus when you're trying to watch how much and what you eat!
