Scrumptious Saturday: Low Carb Eggplant Pizza


Anyone for eggplant?? In my pursuit of low carb food options, I made eggplant pizzas for my dinner a few days ago.  I have to say they turned out pretty well, as long as you can get past the not having a crusty crust element.  I'm assuming there probably isn't a way to get the eggplant really crusty without practically burning it up, but I was ok with that...

Cut thick slices of eggplant, sprinkle them with coarse salt and let it sit for about 15 minutes.  After that, blot the slices with a paper towel (the goal here is to try to get some of the moisture out of the eggplant so it doesn't get totally mushy)

 Heat the oven to about 400 degrees.  I put my little pizzas on a regular cookie sheet sprayed with olive oil.  My pizzas had marinara sauce, mozzarella cheese and pepperoni on them...they bake for about 15 to 20 minutes, until the cheese is nice and melted.

 The toppings slid off my pizzas a bit....maybe I had too much cheese :)  I like the little browned cheesy parts though, so it's all ok..

I have to say these turned out pretty yummy.  Like I said before, the texture was a little different, but on a low carb diet you kind of have to learn to make sacrifices!  I didn't particularly notice an "eggplanty" flavor, and the little bits of salt that stuck on the eggplant really helped with the overall flavor.  Give it a try...you might find you like eggplant pizza!
