Diet Success!! or a small step toward it...
Success!!! Ok, well a small step has been made... My week of low carbing started out ok, but I definitely had some ups and downs. Basically what I mean is I didn't stick 100% to the diet plan for the last 7 days. But I did pretty well, if I do say so myself. Today's weight is 139.6lbs. I am officially under the 140 mark!!! Ok, so it sounds a little funny because its barely half a pound under, but I'm proud of myself, especially because at the beginning of the week, I was ready to give up alltogether..
At the beginning of the week, I was pretty frustrated because my weight just kept flip flopping around the 142 mark. It didn't seem to matter what I did, or how low carb I ate, the fluctuations were just ridiculous. Well anyhow, I was down to 141 for the past couple days (Thursday and Friday), and I was doing really well keeping my carb intake under 30 to 40 grams per day (although yesterday I had a salad at Wendys and it had more carbs in it than I realized). I also have been walking on the canal, about 3 1/2 miles round trip, for the past two nights. I figured out that I was walking somewhere between 3.8 and 4 MPH, which is about the same pace that I go at the gym. It's just been so nice the past few days, that I wanted to be outside! Obviously, something's been working - judging by the weight loss and the fact that my butt and legs hurt more than they do when I work out at the gym. As a side note, I started taking a B vitamin every night, which I think might be helping my energy level - I've definitely felt more energetic and perked up this week.
As I mentioned before, I've been eating a lot of vegetables and chicken. I'm looking for some different ways to cook the chicken, eating it with onions and mushrooms gets a bit old after a while. I made cauliflower pizza crust last night - it turned out pretty well, although it was a bit less crispy than I would have liked. (I'll post about it later!)
So I'm going to do my best to keep this up - our NYC trip is coming up soon, I have no idea if I can shake 5 or 10 pounds before we go, but it's still worth a shot!
