Scrumptious Saturday: Copycat Sandwich Thins

I've noticed that one of the downsides to dieting is the cost...trying to find things that are healthy, low-calorie AND low cost is practically impossible.  For lunches during the week, I usually eat sandwiches made from Arnold's Sandwich Thins, topped with ultra thin slice cheese, turkey meat, tomatoes and mustard.  I have also done egg salad sandwiches made with Greek yogurt, as well as salmon salad sandwiches - but more on that at a later time...  The problem becomes the cost for the sandwich thins - I really like the fact that they only have 100 calories per thin, but the $2.99 price tag for 8 of them is kind of a downer.  I figured there must be a way to make them cheaper, so of course, I looked it up on Pinterest (duuhhh) and voila! I found this recipe from Amie at My Retro Kitchen.

For around $8.20 (the cost of whole wheat flour, wheat bran, and vital wheat gluten - I normally have all the other recipe ingredients on hand), I can make 6 batches of sandwich thins (one batch makes about 15 or 16 thins).  My total cost comes out to less than $0.10 per thin!  To buy a package of 8 sandwich thins at Wegmans, I'd be paying about $0.37 per thin ($2.99 per package).
So needless to say, I'm a very happy girl with my sandwich thins.  They turned out really well, taste very similar to the store bought version, and have about 108 calories per thin.  Here's to another week of delicious lunches!
