Scrumptious Saturday: Quinoa Pudding

For this Scrumptious Satuday, I experimented some more with quinoa and made some Banana Pudding!  It came out rather delicious, not too sweet and perfect for desert or even breakfast (yup, I had some for breakfast this morning!!)  My recipe was slightly altered from this recipe which I found on my favorite allrecipes.com.  

For this recipe, you need:
3/4 cup of quinoa
1 1/2 cups of water
1 3/4 to 2 cups of milk
2 bananas
2 Tbl of white sugar
1/2 Tbl butter
1/2 tsp vanilla extract
To Do:



Rinse and drain the quinoa.  Bring the quinoa and water to a boil in a large saucepan, then turn down to a simmer and cover.  Let simmer for about 15 minutes, or until the water has absorbed, then remove from the heat.  As a side note, I did not have ripe bananas so instead I mushed up the bananas I had and used a whisk to mix the milk, sugar, and bananas together.  Yes, it probably would have been easier to use a food processor or blender, but alas, I don't have either.  Pour the milk and banana mixture into the quinoa and cook it over medium heat until it starts to become thick and creamy.  Mix in the butter and vanilla extract and serve warm.  I figure you can get 5 good sized servings from this recipe, and there are about 220 calories in one serving (more if you decided to use whole milk instead of 2% like I did).  


Mmmm, delicious!!!

  1. How much milk? It's not in the ingredient list, but it is in the directions.

  2. my bad!!! I used just about 2 cups of milk, although I think you could use less, because my pudding was still a bit runny at the end..
