Eating Buffalo In Rochester

One of the most expensive meals that the hubby and I indulge in occasionally is bison burgers. We buy the meat at Wegmans because, honestly, we haven't found it anywhere else locally. In Rochester, 1 pound of bison meat sells for $7.99 (gasp). Needless to say, it's not a staple in our house!! We had bison burgers for dinner on Monday, and as usual, they were delicious!

Bison meat really doesn't need any weird seasonings; I mix in salt, Italian seasonings, and garlic powder and that does the trick. You can either mix the seasonings in with the meat and then make patties, or just sprinkle the seasonings on either side of the patties as you flip them over. I think I mixed in about 2 teaspoons of garlic powder and Italian seasonings, and a little bit more of salt.  You can pretty much eyeball the amounts and be fine, just don't go overboard with the salt because you can't cover that up!  I find that 1 pound of bison meat makes 4 decent sized burgers - they will shrink a bit, although not as much as 80/20 ground beef will, but I still make the burgers rather large and flat. I like to add some yellow American cheese as my burger finishes cooking, then top it with ketchup and relish (hubby sticks to ketchup and mustard on his burger). We use the cheapo hamburger buns, but any hamburger roll or bun will do.




So yummy!! Bison has a slightly sweeter taste to it than ground beef does, which I think is why we like it so much. I've also made bison meatballs, which were good with spaghetti.  I'd like to try making bison meatloaf, but I have to brainstorm that one a little bit before I test it out!

  1. Curiosity got the better of me, so I went looking for other sources of bison in Rochester. I suggest you call Palmer's in the Regional Market. Their website says they sell organic bison. http://www.palmersdirecttoyou.com/store/products.aspx?menuKey=24&categoryKey=113

  2. I did read they sell bison meat at Palmers - I wonder what the price difference would be, if any? Maybe I'll have to stop in sometime when I'm in the area...
